1 loaf of frozen bread dough, thawed.
2T extra virgin olive oil
1 clove garlic
1/2 onion, chopped into 1" pieces
2 peaches sliced very thinly
2 heaping handfuls of shredded parmesan
12 basil leaves
cracked black pepper
1. Without allowing the bread dough to rise, roll it out onto an oiled cookie sheet or pizza pan. 2. Dice (or crush - even better) the clove of garlic into the olive oil. Spread garlicky oil onto dough. 3. Preheat oven to 425* 4. In a small frying pan, melt the butter and add onions. Cook onions until nearly carmelized - about 15 minutes. 5. Add peaches and continue to cook until they wilt a little and look a little carmely themselves - about another 5 minutes. 6. Spread onion and peaches onto the dough. 7. Spread parmesan on top. 8. Crack some black pepper all over that thing. 9. Bake for 10-12 minutes until crust is about ready to turn brown. 10. This part really makes it - are you ready? Cut the basil leaves in half along the stem and sprinkle them all over the place. Deliberately though, ok? Don't mess up now. Try to get a bit of basil in each bite.
